Seasoning: Salt (150g), Soy Sauce (400g), Sugar Color (10g), Scallion (10g), Ginger (4g), Star Anise (4g), Sichuan Peppercorns (3g), Cinnamon (3g), Cloves (3g)

Production

1. Sear the pig's trotters, soak them in warm water for a while, scrape off the dirt and wash them.

2. Put about 3 kg of water into the pot, bring the water to a boil over high heat, add the pig's trotters, skim off the foam when the soup boils, and cook for about an hour before removing the pig's trotters.

3. Pour out the soup, place an iron grate on the bottom of the pot, place the pig's trotters around the pot, leaving a hollow in the middle, pour in the original soup from the middle, add salt, soy sauce, and a meat seasoning bag (scallions, fresh ginger, aniseed, pepper, cinnamon, cloves).

4. Cook over low heat for 2-3 hours, add sugar color, cook for a while and then remove from the heat to serve.

Method 2

Simple version of soy sauce pork trotter

Ingredients: 2 pig trotters, 5 dried red peppers, 20 peppercorns, 2 star anises, 1 cinnamon bark, 2 bay leaves, 2 crystal sugars, 2 cloves of garlic, 2 tablespoons of soy sauce, 1 tablespoon of sweet noodle sauce, 3 scallions, 3 slices of ginger;

practice:

1) Wash the pig's trotters, cut them into small pieces, blanch them and set aside;

2) Put a small amount of oil in a wok, stir-fry the spices, onions, ginger and garlic until fragrant, add the pig's trotters and stir-fry. At the same time, add soy sauce, rock sugar, a little sweet noodle sauce and salt, stir-fry evenly, add hot water and simmer over high heat.

3) Transfer to a stew pot and cook until tender; (If you don’t have an electric stew pot, add enough water at once and stew over medium-low heat for about 1.5-2 hours until the pig’s trotters are soft.

4) After turning off the heat, let the pig's trotters soak in the soup for 2-3 hours to allow them to absorb the flavor.
