Method 1:

200g starch, 20g salad oil, 8g salt, 15ml soy sauce, 5ml cooking wine, a little pepper powder

step:

1. Wash the chicken breast and shave off the fascia;

2. Slice the chicken breast into two large pieces, lightly hit each piece with the back of a knife, and then cut into strips as thick as a little finger;

3. Put the cut chicken strips into all the marinade (15g of Weijixian soy sauce, 5g of cooking wine, 1g of salt, 5g of salad oil, a little pepper powder) and mix well. If you like spicy food, you can add appropriate amount of chili powder to the marinade. Marinate for 20 minutes. You can marinate more in a fresh-keeping box and store it in the refrigerator (it can be stored for about 5 days). It can be prepared in a few minutes when you eat it, which is very convenient.

4. Pour all the dry starch into the marinated chicken strips and mix well with your hands, making sure every strip is completely covered with dry starch;

5. After 5 minutes of rest, start frying;

6. Heat the oil in a pan. Put your hand on the oil surface and you can feel how hot it is. You can also throw a chicken strip in to test the oil temperature. If there are dense bubbles, it's ok. Do not burn the oil until it smokes, otherwise the surface of the raw material will be mushy and the inside will still be raw.

7. Gently shake off the powder on the chicken strips coated with dry starch, put them in one by one, and fry them over medium heat until the surface is golden brown. Chicken is easy to cook, so don't fry it for a long time, otherwise the chicken will be very dry and old;

8. Put the fried chicken fillets in a bowl and sprinkle pepper powder and salt on them while they are still hot. When sprinkling, shake the bowl with your hands to let the chicken fillets turn up and down in the bowl. This way the seasoning is evenly sprinkled. The marinated chicken fillets already have a slight salty taste, so be sure to taste it before sprinkling salt. In addition, if you like spicy food, you can also sprinkle some chili powder or curry powder.

Main ingredients: 500g chicken breast

1. Use a knife to cut the chicken breast into dices or pieces.

2. Add a little cooking wine, salt and black pepper and mix well.

3. Add chopped green onion, ginger and garlic.

4. Add sesame oil, white vinegar, light soy sauce, dark soy sauce and mix well.

5. Add bean paste and mix well (if you like cumin, add cumin; if you like spicy food, add chili powder and pepper powder).

6. Cover with plastic wrap and marinate for two hours.
