1. The first step is naturally to remove the red skin from the peanuts! But this process is very painful because it takes so much energy! If you want to save trouble, you can buy peeled peanuts in the market! What I do here is put the peppercorns and dried chilies in a pot and boil them first, then turn off the heat, put the peanuts into the pot, cover the pot and soak them for an hour to help the peanuts absorb the flavor.

2.1 The third step is to fry the peanuts. Pour oil into the pan, add Sichuan peppercorns and dried chilies (chopped), stir-fry over medium heat until fragrant, add the peanuts and stir-fry for one minute, then pour in an appropriate amount of Lao Baigan, continue to stir-fry until the peanuts change color and the smell of wine fades.

3.2 The second step is to peel the peanuts and drain the water, then put them into a fresh-keeping bag, throw them into the freezer, and freeze them for at least three hours. I chose to freeze it overnight.

4. The fourth step is to take the peanuts out of the pot, quickly remove them, drain the oil and put them into a container.

5. Finally, soak the container containing the peanuts in cold water, and add sugar, salt and chili powder according to your taste (I use the specialty my husband brought back from Guizhou), and mix quickly until there is no heat at all.
