How to make fried chestnuts in a wok

1. Wash the chestnuts with clean water. Use a knife to chop a hole in each chestnut, about 5mm deep. Soak all the opened chestnuts in clean water for about 10 minutes. Take out the soaked chestnuts and drain the water, then wipe the surface moisture with kitchen paper or a clean cloth.

2. Take a clean, water-free wok and put it on the fire. Turn on medium heat and add 300 grams of coarse salt and 300 grams of chestnuts (remember to pour the salt and chestnuts into the cold pot).

3. When the salt becomes slightly hot, turn to low heat and stir-fry the chestnuts with a spatula. As the temperature in the pot rises, the salt grains begin to become sticky and the chestnuts are completely wrapped in salt. After the chestnuts are heated evenly, you can see that the chestnuts will gradually open their mouths. At this time, you need to speed up the frying frequency so that the salt previously wrapped on the chestnuts will slowly fall off.

4. When the color of the salt becomes darker, add one tablespoon of white sugar.

5. After adding sugar, continue to stir-fry. The salt grains will start to become sticky again. At this time, you need to stir-fry quickly and continuously, using a spatula to insert from the bottom of the pot and stir-fry upwards.

6. When the salt grains are no longer sticky and turn dark amber, turn off the heat, cover the lid and simmer for a while to ensure that the chestnuts are cooked through and the caramel aroma penetrates into the chestnuts, then drain the chestnuts with a colander.
