1. Place the longli fish in the refrigerator overnight to thaw naturally. Wash it and cut it into finger-thick strips. Add salt, cooking wine, chicken essence and white pepper powder, mix well and marinate for 10 minutes to remove the fishy smell and enhance the flavor.

2.2. Adjust the pepper flavor: pickled millet pepper, cut red millet pepper into circles, crush fresh peppercorns (or dried green peppercorns), and slice the garlic for later use.

3. Add an egg white and a small amount of starch to the marinated fish, mix well, coat the fish with starch to lock in the moisture and flavor of the fish.

4. Blanch the fish: Pour water into the pot and turn on the fire. When the water temperature reaches 70% to 80% and small bubbles appear on the bottom of the pot, put the fish in. When the fish floats up, take it out and set aside.

5. Add a little oil to the pan, add pickled peppers, millet peppers, Sichuan peppercorns and garlic when the oil is hot and stir-fry over low heat until fragrant.

6. Pour in hot water, add chicken essence (or chicken soup stock) and a little bit of sugar to enhance the flavor, boil over high heat for a few minutes, and pour the soup over the fish.
