How to make black bean chicken

1. Wash the chicken and marinate it with a small amount of salt for 15 to 20 minutes.

2. Put the marinated chicken into the pot, add water to cover the whole chicken, add onion, ginger slices, cooking wine, and appropriate amount of salt, cook over high heat, and skim off the blood and foam on the surface after the water boils.

3. After boiling over high heat, continue to cook for about 10 minutes (depending on the size of the chicken you bought. Here we use half a chicken weighing more than two pounds). After 10 minutes, cover the pot, turn off the heat, and continue to simmer for 10 to 15 minutes. Let the high temperature thoroughly cook the chicken so that the chicken will not be overcooked.

4. Prepare a large soup bowl, add cold water, put ice cubes in it, and put the stewed chicken into the ice water. The purpose is to make the chicken skin more elastic and taste better. It can be used as a dipping sauce when the chicken is cold.

5. Chop the prepared garlic cloves into minced garlic, pour cooking oil into a wok, heat it until slightly hot, add chili sauce, minced garlic, fermented black beans, and peppercorns into the oil and stir-fry until fragrant, then add light soy sauce and steamed fish soy sauce, add appropriate amounts of salt and sugar, stir-fry twice, add a small amount of water, boil it for a while and turn off the heat. (Please note that you should use low heat when making the dipping sauce to avoid burning the bottom)

6. Take out the cooled chicken and drain the water, cut into pieces and place on a plate. After the dipping sauce cools down, pour it on the pieces and sprinkle with some chopped green onions or coriander. OK, done~
