Ingredients: 400 grams of hairtail, 2 scallions, 2 slices of ginger, 1 star anise, 1 tablespoon of cooking wine, 1 tablespoon of soy sauce, 2 tablespoons of balsamic vinegar, 2 tablespoons of sugar, a little salt, and pepper.

Step 1: Remove the head, tail, internal organs and fins of the hairtail, rinse it clean, wipe the moisture on the surface of the fish body with kitchen paper or let it air dry naturally; cut the fish body into 6 cm long sections, and then evenly dip a thin layer of starch on the surface; cut the green onions into sections and cut the ginger into thin strips for later use.

Step 2: Heat the pan first, then pour in the oil. When the oil in the pan is 70% hot, add the hairtail slices and fry until one side is golden brown. Then turn the hairtail slices over and continue frying until the other side is golden brown. Remove from the pan and drain the oil. Leave some oil in the pan to sauté scallion slices, shredded ginger and star anise, then add the fried hairtail slices.

Step 3: Add cooking wine, soy sauce, and balsamic vinegar to the pan to bring out the aroma, then pour in boiling water to slightly cover the surface of the hairtail or level it with it, add sugar, salt, pepper and other seasonings, bring to a boil over high heat, then lower the heat, cover and simmer for about ten minutes. Finally, cook over high heat until the soup thickens.
