3. Egg yolk lotus paste preparation: Wear disposable gloves, take lotus paste and a salted egg yolk, weigh 30 grams each, then roll the lotus paste into a round shape, flatten it and wrap it with salted egg yolk. This way, the mooncake filling is ready. Use this method to prepare all the fillings at once.

4. Roll the relaxed dough into a cylindrical shape, divide it into 20-gram pieces and roll them into balls!

5. After flattening the pastry in water, put the lotus seed paste and egg yolk filling into the pastry, push the pastry upwards with the tiger's mouth, and close the edge without leaving any gaps. After closing the edge, roll it into a round shape in the palm of your hand and shape it into a cylindrical shape.

6. Take a clean plate and put corn starch on it. Put the wrapped mooncake embryo into it and roll it. Dip each side of the mooncake embryo in corn starch. Shake off the excess starch in your palm and put it into the mold to press out the flower shape for later use.

7. After all the mooncakes are pressed, put them in a baking tray with a small amount of water, bake at 200 degrees for five minutes and then take them out.

8. Brush a thin layer of egg yolk water on the shaped mooncake embryo, only brush the top, no need to brush around, put the mooncake back into the oven, bake at 200 degrees for 15 minutes.
