1. Beat the eggs in a bowl, add powdered sugar and beat with a whisk (do not beat the eggs)

2. Pour in milk and stir evenly

3. Sift in low-gluten flour and matcha powder

4. Use a manual egg beater to slowly stir evenly to form a thin batter

5. Heat the butter in water and melt it into liquid, then pour it into the batter and stir evenly.

6. After sifting the batter, put it in the refrigerator and let it stand for half an hour.

7. Coat the pan with a thin layer of oil and heat over low heat. Pour two tablespoons (30ml) of batter and spread into a round shape. Fry until the batter solidifies. Use a spatula to scoop up the fried pancake skin and place it on a plate. Fry all the pancake skins in turn (use low heat when frying, no need to turn over)

8. After the fried pancake skin has cooled, you can wrap it. Add powdered sugar to the animal cream and beat until the pattern is retained. Place the pancake skin (the side that is not touching the pan when frying) facing down, put a proper amount of whipped cream on the pancake skin, put a piece of durian meat on it, and then put a proper amount of whipped cream on it.

9. Wrap the pancake skin into a square shape and wrap the filling completely inside the skin.

10. Turn it over and the durian pancake is ready. The finished pancakes need to be kept in the refrigerator and should be eaten within one day.
