   Step 1

   Chop the meat into small pieces.

   The vermicelli softens when soaked in warm water.

   Heat oil in a wok until it's about 70-80% hot. Add the minced meat and stir-fry until it's about 90% cooked. Add chopped scallions and stir-fry briefly.

   Add Pixian chili bean paste and stir-fry until fragrant.

   Pour the soaked glass noodles into the pot and stir-fry until the sauce thickens.
