Potato soup

Method

   Step 1

   Shred the potatoes; the thickness doesn't matter.

   Step 2

   Prepare chopped green onions.

   Heat oil in a wok until hot, then add chopped scallions and sauté.

   Add shredded potatoes and stir-fry lightly.

   Add water, then add salt, light soy sauce, and chicken bouillon. Bring to a boil over high heat, then reduce to medium heat and simmer for 10 minutes.

   Add the vermicelli, turn off the heat after one minute.

   Add some chopped green onions before serving.
