1. Put 240g high flour, 70g low flour, 100g water, 50g light cream, 50g egg, 50g sugar, 4g salt and 5g yeast into a food processor, mix into a dough, and knead until it expands and dissolves. Add butter and knead the dough until it is fully kneaded. It does not need to be as hard as toast. After kneading, put it in a bowl and ferment it in a warm place until it doubles in size

2. Cut the dough into 20g pieces each, about 30 pieces, and let it rise for about 20 minutes.

3. Roll each dough into a round shape, and make 5 in a group. Some people make it in a group of 4, and arrange each group in a staggered manner. I spread a thin layer of custard filling on it and sandwiched a few dried cherry tomatoes.

7. Put it into the mold and continue to ferment in a warm place. Control the second fermentation well and don’t overdo it. Brush a layer of egg liquid after it is fermented.
