If we want to eat healthily, we need to cook our own meals. Only in this way can we be healthy. For this reason, I will first talk about the recipe of pickled green beans.

1. Wash the beans and air dry them;

2. Cut the pepper into sections and slice the garlic. Put boiled or filtered cold water in a large bowl, add the pepper peels, fennel seeds, salt and pepper.

3. This jar is called "Qi Si Yi", which is the best place to pickle vegetables. After cleaning the jar, wipe it dry with a cloth, then wipe the inside of the jar with strong alcohol to kill bacteria and prevent mold, and dry it;

4. Add green beans and the prepared water. If the water level is not high enough, add some cold boiled water to maintain the water level. As for the amount of salt, the water should be relatively salty. At this time, we can see that the peppers and ingredients are floating on the surface, and the beans are kept above the water. Then pour in the strong liquor and stir it a few times with clean things.

5. Put the lid on and fill the groove on the side of the lid with water. You should add some water every day to keep the water from isolating the inside of the tank from the outside air. But if you forget to add water sometimes, it doesn’t matter. If you live in a place with better air, the time for things to mold will be longer accordingly. And the water is so salty, it’s not a big problem.

6. It will take about 15 to 20 days to be taken out of the jar. You can cut it into small pieces together with the pickled peppers and stir-fry it with meat or vegetables. It is very delicious with rice or porridge.

7. After taking it out of the pot, you can stir-fry it with the meat or separately. Stir-frying it alone is the most suitable for porridge. Cut the beans into grains, rinse them in clean water to remove the saltiness, dry them slightly with your hands after taking them out of the water, put them in a frying pan, turn on a low heat, and slowly stir-fry until they are dry. At this time, we can see a layer of powder on the bottom, which is the starch of the beans.

8. Take out the fried beans, wash the pot, cut the dried chilies into sections, put them into the pot, turn on a low heat, add a little oil, slowly stir-fry the dried chilies until they bring out the flavor, then turn on a high heat, pour in the fried beans, sprinkle some cooking wine, add 1/4 teaspoon of sugar to adjust the seasoning, and stir well.

For some people, making pickled green beans may be simple, but only if you put your heart into it, can you really do it well.
