1. Dice the lean meat, add salt, white pepper and cornstarch to coat and set aside; make rice noodles (refer to the method in Steamed Beef with Rice Powder); wash and drain the fresh peas.

2.12 Place the wok on the fire and heat it up. Pour 3 to 4 tablespoons of oil and heat it until it is 50% to 60% hot.

4. Add Pixian fermented bean paste.

5. Stir-fry quickly and evenly.

8. Add peas into the pan and stir-fry until all the beans change color.

9. Add water to cover the beans and bring to a boil over high heat, then reduce to medium heat and simmer until the beans are soft.

10. Add diced meat into the pot and wait until the water boils again.

11. Sprinkle the rice noodles evenly into the pot, and stir-fry quickly and continuously to prevent the rice noodles from clumping and sticking to the pot, until the soup becomes thick and paste-like.

12. Pour the thick pea soup into a large bowl and heat it in the microwave on high heat for 2 to 3 minutes. The pea soup is ready. It tastes better if you sprinkle some chopped green onion and coriander on it.
