1.1 Blanch a yam in boiling water for 2 minutes, remove it, peel it, cut it diagonally, and soak it in light salt water for later use. Dice carrots, green and red peppers.

2.2 Soak 5 shiitake mushrooms and 5 black fungus in warm water until soft, remove the stems and cut into strips for later use

3. Blanch all the ingredients including green and red peppers, diced carrots, corn kernels, mushrooms and black fungus in boiling water for 1 minute, then remove from the boiling water and rinse with cold water. (Add some salt and oil to boiling water)

4. Heat the pan, pour in the oil, and when the oil temperature is 60-70% hot, add the chopped green onion, ginger and garlic and stir-fry until fragrant; quickly pour in all the ingredients and stir-fry quickly, sprinkle some salt, sugar, 2 teaspoons of cooking wine, 1 tablespoon of broth or boiling water, 1 teaspoon of chicken essence; finally thicken with water starch, drizzle a few drops of sesame oil and serve

5. Red, yellow, green, white and black, colorful; beautiful color, crispy and tender taste; light and fragrant, rich in nutrition; it is the best vegetarian dish!
