7. After all the hairtail fish are fried, you can add pepper and salt and eat it. It is crispy and delicious. Because I want to make sesame crispy hairtail, I prepared other ingredients to continue cooking

8. Add a little oil to the pan, sauté the scallion, ginger and garlic, then add the tied hairtail and stir-fry.

9. Pour a large bowl of vinegar into the pot and add an appropriate amount of white sugar. Add this much vinegar. The fish bones won't be sour at the end, but the vinegar plays a key role in making them crispy. The addition of sugar is to remove the fishy smell and to enhance the taste.

10. After simmering for 20 minutes, when there is no more soup in the pot, take out the hairtail and place it on a plate for later use.

11. Add a little oil to the pan and pour in the garlic chili sauce. I used the chili sauce imported from Thailand, which is quite spicy. Stir-fry until it turns bright red.

12. Pour the stewed hairtail in, sprinkle with an appropriate amount of white sesame seeds, and stir-fry until the hairtail is covered with sesame seeds and hot sauce.

13. The sesame crispy hairtail is ready. The fish bones inside have been softened by adding a large bowl of vinegar. Pick up a piece, it has a sweet and sour taste with garlic flavor and a light spicy taste. Try it.
