What is the recipe for Fujian Qianlixiang wontons?

Hun Dun, also known as wonton, is a very popular food in my country. I believe many people have eaten a bowl of wonton soup with a basket of hot dumplings in the morning. The wonton skin is thin and the filling is large. It tastes very smooth and fragrant. If we were to ask which place has the best wonton, it would probably be the Qianlixiang wonton from Fujian. The taste of Fujian Qianlixiang wonton is suitable for people all over the country, so what is its recipe?

Fujian Qianlixiang Wonton Recipe

1Peel the ginger and cut it into minced pieces. Peel the onions and cut into chopped green onions. The onion may not be cut very finely at once, so just chop it more with a knife. Everyone may encounter the problem of irritating eyes when cutting onions. You can put a bowl of cold water next to the chopping board, which can reduce the irritation of the spicy onion to the eyes.

2 Chop the minced meat hard until it becomes a bit sticky and paste-like. Add the scallions into the chopped minced meat and continue chopping so that the scallions and meat are fully mixed and the onion juice can penetrate into the minced meat.

3 Add soy sauce, salt, cooking wine and a little water (pepper water will be more fragrant) to the meat filling, and stir continuously in a clockwise direction to make the meat chewy.

4. Beat an egg into the meat filling, continue to stir clockwise, then add thirteen spices and stir again.

5 Prepare a bowl of water and some wonton wrappers. The wonton wrappers are bought from a butcher's shop. They are very convenient. One for 20 cents is enough for three or four people.

6 Take a piece of wonton wrapper in your hand, put the meat filling on it, roll it up from the end with the meat filling, and stop one centimeter away from the top. Pull the lower left and right corners of the rolled wonton inward, apply a little water on one of the corners, and then stick the two corners together. Okay, the wontons are wrapped. You may worry that the sides of the wontons are not pinched tightly, but don't worry, the filling will not come out when cooking, because the meat will shrink when the wontons are put into water. I think the finer the wonton meat filling is chopped, the tastier it is.

7 Boil water in a pot and add a little broth. If there is no broth, you can pour a little soy sauce and sesame oil.

8 After the water boils, add salt, then put the wontons. When the water boils, add seaweed, dried shrimps, whitebait, and some green vegetables such as rapeseed. Cook for a while, then add a little cold water and continue to boil.

9 Pour the cooked wontons into a bowl, sprinkle with coriander and serve.
