300g hairtail, 1 egg white, 6g salt, 3g pepper, 2g chicken stock, 3ml cooking wine, 2ml soy sauce, 3g ginger slices, 4g pepper, 100ml cooking oil

1. Use scissors to cut off the internal organs of the hairtail fish; then remove the head of the hairtail fish; and then cut off the fins and tail on the other side of the hairtail fish.

2. Cut the hairtail into small pieces of uniform size;

3. Wash with warm water, add all the seasonings except egg white and cooking oil and mix well;

4. Put it in a fresh-keeping box and refrigerate it overnight;

5. Wrap the marinated hairtail in egg white;

6. Put the pot on the fire, rub it with ginger slices, add peanut oil and heat it to more than 80% boiling, put in the fish pieces, turn them over with a hand spoon, and fry them for half a minute to 1 minute. When the fish pieces turn yellow and float to the surface of the oil, you can pick them up with a colander;

7. When the oil temperature in the pot rises to boiling point again, return the fish fillets to the pot and fry them again. When the skin is fried until crispy, remove them from the pot, drain off the remaining oil, and place them on a plate. Dip them in pepper salt when eating.

1. Wash the hairtail fish and cut it into small pieces as shown below.

2 Take out three eggs, separate the egg yolks and egg whites into two bowls respectively, leaving only the egg whites, and stir the egg whites evenly with chopsticks.

4 Pour proper amount of cooking oil into the wok and heat it over medium heat until 70% cooked. Turn the small pieces of hairtail fish over in the egg white, then turn the heat from medium to low and gently fry in the pan. Be careful not to make the oil temperature too high when frying, otherwise the hairtail fish will jump out and burn your skin. Fry the hairtail slowly, one at a time. Don't be impatient and put in too much. When the first side is slightly browned, turn it over and fry the other side. When both sides are fried until slightly browned, remove from the pan. Continue frying until all your hairtail fish pieces are fried.

5. Place the fried hairtails one by one on a clean plate and garnish with some green leaves.
