How to make Tai'an fish

Today, I will teach friends who like to cook how to make a Jianghu dish - Tai'an fish, so that your family can eat more healthily.

1.12 Ingredients: Grass carp (usually silver carp, I use grass carp, silver carp is a bit fat), garlic (more, this dish is mainly garlic flavor)

2.21 Cut the fish into small cubes, add salt and cooking wine and marinate for about 10 minutes to remove the fishy smell

3.1 Cut the dried chili peppers into sections, slice the ginger, dice the pickled ginger and pepper, peel the garlic, and cut the green onions into sections

4.2 After marinating, add starch (sweet potato flour) and mix well

5. Crispy fish: Pour oil into the wok, and when the oil is 90% hot, start frying the fish.

6. When crispy, remove from the pan and set aside; pour out some of the oil (leave a little oil in the pan)

7. Heat oil in a pan, add ginger slices, dried chili peppers, and peppercorns, then add the crispy fish cubes and sauté until fragrant.

8. Take out the water, add some oil, add pickled ginger, pickled pepper, bean curd, star anise and fry until fragrant, then add sugar to color and season.

9. Add the fish and stir-fry, then add soy sauce, garlic and beer. Bring to a boil over high heat, then simmer over low heat for 15 minutes.

10. Cook until the fish is well-seasoned, add green onions and cook for another 3 minutes

11. Finally, add MSG, the previously coated (leftover) starch, add water and mix well, pour into the pot to collect the juice, and remove from the pot.
