Method 1:

1.Slice or chop the ginger. I started by shredding it, but later decided that chopping it would be better. The lighting was bad at night and I forgot to turn on the flash.

2. Cut the red dates into shreds. I put the pits in as well.

3. Put it in the pot

4. Add water and cook

5. Add brown sugar to the water. Add a lot of brown sugar. Taste and add more as you go, because it will be soaked in water later. It’s okay to add more as long as it feels sweet.

6. Keep cooking until the pot is almost dry.

7. Let cool and bottle. When drinking, scoop out a little and rinse with water.

8. It is recommended not to drink it at night, as it is not good to eat ginger at night. This actually doesn't take long. It mainly involves chopping and boiling. I'm not very good with a knife. I only started chopping when I was away from my mom to study. It took me almost two hours to chop all this. If you have a blender, that's the best. When juicing the ginger, don't remove the residue. Just use the ginger juice.

Method 2:

1. Wash the Huai ginger thoroughly. Because the Huai ginger is not as big and clean as the ginger used in cooking, it takes more effort to wash it.

2. Cut into small cubes for easy juicing.

3. I used a juicer at home to squeeze the juice, and filtered it with a sieve after frying.

4. Filtered ginger residue

5. Wash the jujube, remove the core and cut into cubes

6. Choose brown sugar, which has better effect and taste than brown sugar

7. Pour all the ingredients into the casserole, including the ginger juice.

8. Simmer over low heat, stirring constantly for about two and a half hours

9. Add honey. I use fresh honey from my own bee farm. It is raw honey that has not been processed, so it is not too sweet or greasy, and the color is also beautiful.

10. Boil for another hour. There is no water, so it needs to be boiled for a long time to become sticky and it will not stick to the pot. Dry it and put it into cans and store it in the refrigerator. Because no preservatives are added, it is recommended to drink it within a month.
