1.1 Wash the pork belly with skin, burn it with the skin facing down over the fire to remove the hair, then rinse it in water. Put enough water in the pot (enough to cover the meat), add sugar water, bring to a boil, put the meat in and cook until you can pierce it with chopsticks, take it out and apply a little sugar on the surface of the meat while it is still hot.

2.2 To make sugar water, put a little oil in the pot, heat it to 80%, turn to low heat, add 3 grams of sugar and melt it until it turns amber, then add 150 grams of water and bring to a boil. Pour into a small bowl.

3. Pour oil into the pan and heat it to 70% to 80% (the blue smoke on the oil surface spreads in all directions and the oil surface is calm), turn to medium heat, and fry the whole piece of meat skin side down in the pan. (It is best to cover the pot with a lid to prevent oil from splashing and scalding you.) Fry the skin until golden brown, turn the meat over and fry all over, then remove from the pot and drain the oil. Put water in a pot and bring it to a boil. Put the whole piece of meat skin side down into the water and continue to cook for 2 minutes. Take it out and drain the water.

4. Cut the fried meat into pieces, each about 0.8 cm thick, arrange them skin side down in a bowl, and sprinkle salt evenly on them. Steam in a pressure cooker for 25 minutes.

5. Take the steamed braised pork out of the pressure cooker, cover it with a bowl, hold two bowls with both hands, turn the braised pork upside down, arrange it evenly in the bowl, and sprinkle chopped green onions on it;

6. Chop ginger, garlic and chili, put oil in the pot, add a little salt and stir-fry ginger, garlic and chili, add 150ml of water, a little dark soy sauce and sesame oil, bring to a boil and pour over the braised pork.
