1. Wash the pork belly and cut it into cubes. Make sure the cubes are slightly larger.

2. Put the meat and scallion into a pot of cold water, add 1 spoon of cooking wine, bring to a boil and continue cooking for four to five minutes, then turn off the heat. ——Should you blanch pork in a cold water pot or a hot water pot? I've tried both, and the results are similar. It depends on the meat. If the meat you buy looks bloody, use cold water to thoroughly remove the blood.

3. Rinse the blanched meat with warm water and drain.

4. Pour the drained meat into the pot (without adding oil), fry over low heat until the surface of the meat is slightly yellow (the meat has already produced some oil), add rock sugar and stir-fry together

5. Stir-fry over low heat until the sugar melts. ——If you have trouble controlling the heat, just pay attention to the bubbles. When large and dense bubbles appear as shown in the picture above, you can turn off the heat and stop frying. Otherwise it would be "overkill"

6. Add boiling water, the amount of water should cover the meat, add dried hawthorn, and simmer on low heat for about 30 minutes

7. After 30 minutes, turn to medium heat to reduce the sauce, add 1 spoon of dark soy sauce and appropriate amount of salt for seasoning. - During this step, you must stay by the pot and stir fry continuously so that the soup covers each piece of meat.

8. The juice should be as shown in the picture above. Don’t make it too dry, otherwise it will easily cause pulling of the threads. This dish is best eaten hot, so serve it immediately after it is ready and sprinkle with appropriate amount of coconut flakes. ——The pot where meat was cooked will have sugar juice attached to the pot. Add some hot water and boil it, and it will be easy to clean.
