1. Clean the catfish after slaughtering it.

2. Boil water, blanch the tofu cubes, then take them out and put them in cold water.

4. Drain the tofu and set aside.

6. Add the catfish and shake the pan, do not flip it with a spatula.

8. Pour in beer, light soy sauce and dark soy sauce and bring to a boil over high heat.

9. Cook over low heat for 20 minutes and add salt.

Tips:

1. It is best not to choose a catfish that is too small. 600-1000 grams are both fine. Farmed catfish have eight whiskers, while wild catfish have four.

2. It is best to throw away catfish roe and not eat it. Some fish sellers will not throw it away for you, so you have to remove it when you come back to clean it.

3. Catfish feels very slippery, but after being scalded with boiling water, a layer of white "skin" will appear all over its body, which is easy to wash off. After washing, the catfish will not be slippery.

4. Fry the pepper, onion, ginger, garlic and other ingredients on low heat, and the dish will be fragrant.

5. Catfish is very tender and smooth, so don't cook it for too long, but it shouldn't be cooked for too short a time either, 15-20 minutes is fine.
