How to make walnut bread

1. If the walnut kernels are raw, they need to be processed first. Put the walnut kernels into the middle layer of the preheated oven at 170℃ and bake for 8-10 minutes until golden brown.

2. After the roasted walnut kernels have cooled, divide them evenly into two portions. Chop one into small pieces and grind the other into a coarse powder in a food processor.

3. Knead the high-gluten flour, water, fine sugar, salt, dry yeast and walnut powder together into dough. When the gluten is formed, add olive oil and continue kneading until it reaches the expansion stage. Add chopped walnuts to the dough and knead until well combined. Place the dough in a bowl, cover with plastic wrap, and let it ferment at room temperature for 40 minutes to 1 hour, until it becomes 2-2.5 times larger (the fermentation time varies depending on the room temperature)

4. Use your palm to press out the gas from the fermented dough, divide the dough into 6 portions, roll them into balls, cover with plastic wrap and let them rise for 15 minutes

5. Sprinkle a thin layer of flour on the table, take a small piece of dough and place it on the table, flatten it with your palm, and then use a rolling pin to roll it into an oval shape.

6. Roll up the oval dough from top to bottom, bringing the two sides towards the middle while rolling, and roll all the way to the bottom. Pinch the edges tightly to form an olive shape with a large middle and small ends.

7. Place the shaped olive-shaped dough on a baking tray for final fermentation. (The best fermentation environment: temperature 35-38 degrees, humidity 85%, reference fermentation time 40 minutes.)

8. After the dough has fermented to twice its size, use a thin and sharp blade (a razor blade is recommended) to make three oblique cuts on the surface of the dough (about 0.5 cm deep). Put it in the oven preheated to 200℃, bake for about 12 minutes, until the surface is golden brown.
