How to cook braised pig's feet in an electric pressure cooker

It is also a common practice to use an electric pressure cooker to stew pig's feet. The advantage of using an electric pressure cooker is that it saves time. We know that pig's feet are not easy to rot. Generally, if you use an ordinary pot, it will take at least 2 hours to cook. Using an electric pressure cooker will greatly shorten the time and it is also more delicious. The method of stewing pig's feet is relatively simple. You need to prepare an appropriate amount of ingredients. Before cooking, blanch the pig's feet in hot water to remove blood and impurities.

How to cook braised pig's feet in an electric pressure cooker

Ingredients: 4 pig's trotters, auxiliary ingredients: 5 green onions, 4 cloves of garlic, 4 slices of ginger, 3 dried chilies, 2 cinnamon sticks, appropriate amount of fennel, 2 spoons of caramel, 3 star anise, appropriate amount of salt, 2 spoons of light soy sauce, 2 spoons of dark soy sauce, 1 spoon of cooking wine

1. Wash the pig's trotters with hot water first, and use a knife to roughly cut them into small pieces along the joints from the middle of the trotters. If it is difficult to cut them into two large pieces, it will be easier to cut them after braising.

2. Boil water in a pot and blanch for two or three minutes

3. Then take it out and rinse it with cold water to filter out the blood foam

4. Prepare gauze, wrap garlic, bay leaves, dried chili peppers, fennel, cinnamon, star anise, etc. and tie them up to make a marinade bag

5. Place the green onion and ginger slices in the pot and add the marinade bag

6. After spreading the spices, place the pig's trotters in the pot.

7. Pour in enough cooking wine and some light soy sauce

8. Add sugar color made with rock sugar (if you don’t know how to make sugar color, you can just use rock sugar instead), dark soy sauce

9. Add candied dates (candied fruit) and 80% water to soak the pig's feet.

10. Put it in the electric pressure cooker and turn on the red light until the tendon button is set to start the marinade making process

11. After the stew is done, remove the stew bag and discard the green onion leaves. Add appropriate amount of salt and chicken essence to season and simmer for 2 minutes. Sprinkle some chopped green onions before serving.

Cooking tips 1. This pig's trotter uses sugar color, which has a very special caramel flavor. If you use rock sugar directly, it will also work, but the taste will be a little different. 2. If you don't like marinade, you don't need the marinade bag. Sometimes I don't use the marinade bag, and the original flavor of the pig's trotter is actually very delicious. 3.
