Simple method of cooking pig's feet in a pressure cooker

The skin of pig's trotters is relatively thick, and it contains more collagen, so the stewing time of pig's trotters is relatively long. In order to save time, you can put it in a pressure cooker, which can save most of the time. The method of using a pressure cooker to cook the main dish is the same as that in an ordinary pot. Some cleaning work needs to be done before that. The pig's trotters need to be dehaired and deodorized, chopped into large pieces, blanched in water, and then cooked.

Main ingredients: 2 pig's trotters. Accessories: 1 bay leaf (for stir-fry), 2 tablespoons of braised soy sauce, 1 tablespoon of cooking wine, appropriate amount of salt, appropriate amount of water, 1 star anise (for stir-fry), 20 peppercorns (for stir-fry), 4 scallions (for stir-fry), 2 cloves of garlic (for stir-fry), 2 dried chilies (for stir-fry), 2 slices of ginger (for stir-fry), 5 pieces of rock sugar, appropriate amount of oil

1. Cut the pig's trotter into pieces, blanch it in water, and remove it after the water boils.

2. Pour a proper amount of oil into the pot, heat it up and turn to low heat, add the rock sugar and stir slowly until the rock sugar melts.

3. Add the pig's trotters and fry until they change color, then evenly coat them with rock sugar.

4. Add in the ingredients and fry until fragrant

5. Pour in the braised soy sauce and stir-fry until evenly colored

6. Add a little more water to cover the pig's trotters, add cooking wine and salt

7. After boiling, transfer the pig's trotters into the pressure cooker

8. Select bean tendons, default is 50 minutes

9. After 50 minutes, the pig's trotter is already very soft and is ready to eat.

10. Pour the cooked pig's trotters back into the pot and cook over high heat until the soup is absorbed (this step can be omitted)

11. Finished, serve

How to choose pig's trotters

1. Look at the color and observe the hooves. Normally, pig's trotters should be light yellow after being dehaired, so when you see clean white trotters, you should be alert. However, not all pig trotters soaked in the medicine are white, some are red. The best criterion for judgment is your own hands. No matter how white the hands of the "warriors" are, they have not been bleached. Therefore, by referring to the skin color of your hands, you can easily distinguish this "white" from that "white". Soaked pig's trotters are usually larger than those not soaked. When buying pig's trotters, you cannot just pick the big ones. A normal pig's trotter weighs about 8 taels to 1.2 taels. If it is too big, it is definitely not the "Yao Ming" of the pig's trotter world, but a completely bleached product. Of course, if it is too small, it is not a matter of food safety, but whether it can satisfy your appetite when eaten.

2. Touch it to see if it is sticky. The pig's trotters soaked in medicine feel sticky, but those not soaked do not have this sticky feeling. Press the pig's trotter gently with your hand. The soaked trotters will feel harder, while those not soaked will feel softer. If you use these things to soak pig's trotters, there will be no grease at all on the trotters. Even when you soak them in water after buying them, there will be no oil foam. 3. Get closer and smell the scent . The soaked pig's trotters can smell faintly of medicine, and sometimes this smell of medicine can even cover up the fishy smell of the pork itself.
