How to prepare squid sauce

The most common way to cook squid is on the iron plate. The key to grilled squid is the barbecue sauce. When many friends grill squid at home, the taste of the squid is often affected because the barbecue sauce is not made well. So how do you make authentic and delicious barbecue sauce? During the baking process, sprinkle appropriate amount of five-spice powder, cumin powder, chili powder and pepper powder on the surface of the squid. After baking, brush a layer of fragrant sauce on the surface of the squid and it can be eaten.

Preparation of the grilled squid sauce: Ingredients: 500g pickled pepper, 150g sesame paste, 200g peanut butter, 40g chili oil, 100g garlic kernels, pepper powder

30g, MSG 80g, Super Umami 10g, Chicken Essence 100g, Sugar 20g, Salt

Gram 40 grams.

First, chop the pickled peppers and peel and mash the garlic cloves.

Use a porcelain container to put sesame paste, peanut butter, chili sauce, garlic kernels, pepper powder, super umami, chicken essence, sugar, salt, etc. and mix well.

Heat the vegetable oil until it is 80% cooked, add the chopped pickled pepper and fry until fragrant, then pour into the prepared ingredients in the porcelain bowl, cover it with a lid, let it cool down and taste it again. If it is too salty, add some sugar and MSG. If it is too bland, add some salt to make a fragrant sauce.

There are also several types of sauces: sweet sauce, spicy sauce, and fresh noodle sauce (seafood sauce). Then there are mixed sauces, which include sweet sauce, hot sauce, and salty sauce. Add starch, soy sauce, MSG, and salt and simmer slowly! Also add some sesame seeds.

Sweet sauce: The main ingredients are tomato sauce, oyster sauce, and sweet noodle sauce (the supermarket sells Xiaodai’s roast duck sweet noodle sauce, which tastes good), and their ratio is 1:2; 1 After mixing, you can add some cumin powder, chili powder, etc. according to personal taste, but don’t add salt.

Fresh noodle sauce (seafood sauce)

The method of making sweet sauce is actually very simple. It is just traditional sweet noodle sauce, add some oyster sauce and fish sauce. If you have the conditions, you can buy XO seafood sauce. It tastes better but is more expensive. It can be bought in large supermarkets, farmers' markets and grocery stores. It smells good because the squid is bright and fresh, and the seasoning plays a role.

Hot sauce: For a simpler option, use garlic hot sauce

Or add a few spoonfuls of noodle sauce, hot sauce, appropriate amount of salt and pepper, and sugar, stir-fry until fragrant and the sauce is evenly attached to the squid, then remove from the pan. (Note: Do not use sweet noodle sauce, fresh noodle sauce is sold in supermarkets. Use the fine chili sauce, not the chopped pepper. Of course, the thirteen-spice kind is best.
