Tomato and red wine braised oxtail recipe

1. Ingredients: 500g oxtail, 4 teaspoons oil, 50g bacon, half an onion, 1 carrot, 3 bunches of celery, 4 cloves of garlic, 250g red wine, 10g rosemary, 1 large tomato, 2 bay leaves, 70g tomato paste, 5g salt, 5g pepper

2. Chop onion, celery, carrot and tomato into cubes, and slice celery and garlic. Sprinkle the oxtail with salt and pepper

3. Heat a frying pan, add a little oil, and fry the seasoned oxtail on both sides to color it and seal the gravy.

4. Fry both sides of the oxtail and set aside

5. Saute onion, celery, carrot, bacon and then tomato until soft

6. Add 2 tablespoons of tomato sauce and stir-fry until red oil comes out

7. Pour in 250 ml of red wine and concentrate it to half, then add 1.5L-2L of broth or water

8. The soup must cover the oxtail, then season with salt and pepper

9. You can stew the oxtail in a pot, but if you have an oven at home, you can pour the oxtail into a baking dish.

10. Cover with tin foil and bake in the oven at 180°C for 2.5 hours. Another easy way is to use a pressure cooker for 25-30 minutes.

11. After 2.5 hours of heating, you can check the stewed oxtail. If the chopsticks can be inserted into the oxtail smoothly, it proves that the oxtail is completely soft. You can serve it on a plate, but if you like delicate serving, you can pay attention to the next two steps.

12. Remove the oxtail and strain and squeeze the remaining stock and vegetables. The thick soup is ready.

13. You can peel the carrots into olives and cook them with the onions until soft.

14. Add peeled cherry tomatoes

15. Boil the small tomatoes, onions and carrots until soft and add the oxtail. This is how you make a pure oxtail soup.

16. Plating: Place all ingredients on a plate and garnish with rosemary. Serve with muffins or mashed potatoes
