First, activate the highly active dry yeast for wine with 5% sucrose solution and 10% fruit juice at 37-40℃ for 1 hour, pour it into the fermentation mash and stir well. ④The main fermentation temperature was 30℃, 20℃ and 10℃ respectively to study the quality of longan wine at different temperatures. ⑤ After the main fermentation is completed , the lees are separated and transferred to tanks for post-fermentation. ⑥ Add 60° rice wine to adjust the alcohol content to 18°, 20° and 25°. ⑦ Aging: The wine is aged in a sealed container at room temperature for 3-6 months and then bottled after aging and clarification.
