Recipe for braised pork head

Pig head meat is a little special because there is relatively less meat in this part and it is a bit dirty, so cleaning it is a big deal if you cook it at home. But the taste of the braised pig's head is really unique. The pig's head is neither fat nor lean and very chewy. With the special sauce, it is simply a great dish to go with rice. However, the steps for making this dish are complicated, and there are many ways to cook braised pork head, such as stir-fried pork head, braised pork head, and Northeastern home-style braised pork head.

Ingredients: half a pig's head (5 jin), 3 sections of green onion, 3 large slices of ginger, 2 star anise, 2 dried chilies, about 15 crystal sugars, about 15 Sichuan peppercorns, 1 section of cinnamon, 3 hawthorns, 2 tablespoons each of dark soy sauce and seafood soy sauce, and 5 tablespoons of bean paste. Method: 1. Put the pig head in cold water, add 1 tablespoon of cooking wine and boil it. Boil for 3-5 minutes. Take it out and use tongs to remove the exposed pig hair. (Fortunately, the pig head I bought was cleaned fairly cleanly, with only some pig hair at the base of the ears) Use a knife to remove the bones little by little along the teeth. You don't have to remove the bones. I saw that the pig teeth were black and uncomfortable, so I pulled out the teeth. Remove the hair along with the bones. 2. Put the pork head into the pressure cooker and add all the seasonings. 3. Add clean water. The water level should be level with the meat. My pot is 5 liters, and it's very difficult to stuff all this meat into it. In the end, a part of it was still exposed. 4. Press for 20 minutes. 5. After taking it out of the pan, wrap the meat with tin foil while it is still hot. 6. Take it out and slice it when eating. Isn't it a level higher if you make the pig's head into various shapes like elbows? The taste is no worse than pork elbow.

The second sauce is stir-fried pork head .

Method: 1. Slice the cooked pork head; wash and slice the garlic; wash and seed the chili and cut into pieces; chop the Pixian bean paste; 2. Heat oil in a pan, add the garlic slices and Pixian bean paste and sauté until fragrant, then add the pork head, bamboo shoots, chili, green beans, and soy sauce and stir-fry, add sugar and MSG, then drizzle with red oil.

The third sauce is fried pork head.

Ingredients: 300 grams of cooked pork head, 100 grams of green and red peppers, bamboo shoots, garlic, peanut oil, hot sauce, MSG, sugar, soy sauce, and chili oil as appropriate. Method: 1. Cut the cooked pork head into slices, slice the garlic, and cut the green and red peppers into pieces. 2. Heat oil in a pan, add garlic slices and chili sauce, stir-fry pork head, bamboo shoots, green and red peppers, add seasonings and drizzle with red oil.
