Vegetable pancake recipe

Ingredients: 100g high-gluten flour, 2 eggs, 20g leeks, 2 shallots, 1/2 carrot, 1 teaspoon (5g) salt, 1 tablespoon (15ml) oil. Method: 1. Wash and drain the leeks and shallots, and cut into 1cm long pieces. Wash the carrots and cut into thin strips. Beat eggs in a bowl. 2. Add 100ml of cold boiled water and beaten egg liquid to the high-gluten flour, and use a whisk to slowly beat it into a batter. The best consistency of the batter is that the whisk can be pulled up and then slowly drips down. 3. Add the chopped leeks, green onions and carrots into the batter, add salt to taste and mix well. 4. Heat the oil in a frying pan over medium heat until it is 70% hot. Use a large spoon to scoop the prepared batter into the pan, and spread it evenly over the bottom of the pan, about 0.5 cm thick. Fry until the bottom is golden brown, then use a wooden spatula to gently separate the pancake from the pan along the edge of the pan. Then turn it over and fry the other side until both sides are golden brown. 5. Cut the fried vegetable cakes into diamond-shaped pieces and serve.

A little trick is to use a spatula to gently press the surface of the pancake when turning it over. This way the pancake will be firm and delicious. In addition, the skill of mixing batter is also very important. The batter must be adjusted to a moderate thickness.

Method 2

Vegetable pancakes are very similar to Okonomiyaki, but the method and ingredients are simpler. The sauce is replaced by Kikkoman soy sauce paste instead of pork chop sauce.
