How to make Almond Crown Pie

1. Cut the butter into small pieces and soften it at room temperature.

2. Add flour and salt and slowly pour in water.

3. Knead into dough, wrap in plastic wrap and refrigerate to relax for more than 1 hour. (Knead the dough as little as possible to reduce the gluten)

4. Take out the dough and roll it into about 2/3 of the length of the dough sheet wrapped with butter; fold down the upper 3/1 of the dough sheet to cover half of the butter.

5. Fold the lower 3/1 of the dough up again and pinch the edges around it.

6. Rotate the folded dough 90 degrees, roll it into a rectangle, and fold it in half to complete one fold.

7. Refrigerate for 30 minutes. Repeat the unfolding and folding steps for a total of 5 times.

8. After the last 3 folds, refrigerate and let rest for at least 2 hours. (Refrigerate as much as needed to relax)

9. Take out the dough and cut it into 2 parts.

10. Roll into a rectangle with a thickness of about 4mm, cut into round puff pastry with a diameter of 21cm, and refrigerate for later use.

11. Add softened butter and powdered sugar and mix well.

12. Add egg liquid in batches and mix well.

13. Pour in almond powder and mix well to make cream almond filling.

14. Take out the puff pastry, press a mark in the middle with a 15cm diameter bowl, put in the cream almond filling, and slightly shape it into an arc.

15. Apply a layer of egg liquid on the dough around the indentation, cover it with another piece of puff pastry and stick the dough together; cut the dough into flower shapes.

16. Use a sharp knife to lightly scratch radial patterns on the surface and poke a small hole in the center of the pattern to release heat during baking; brush the surface with egg liquid and refrigerate for more than 2 hours.

17. Take out the pie dough and put it into the oven preheated to 200 degrees, middle layer, upper and lower fire, bake for about 20 minutes until the dough expands, turn to 180 degrees and bake for about 20 minutes.

18. Brush a layer of syrup on the cake while it’s still hot.
