How to make vinegar and pepper meatball soup

1. Cut the coriander into long pieces; cut the scallion into shreds;

2.12 Chop the green onion leaves and ginger into fine pieces;

3.21 After chopping the lean pork, smash it into paste with the back of a knife;

4.12 Add chopped green onion, chopped ginger, salt, egg white and starch to the meat paste;

5.21 Stir vigorously in the same direction;

6. Pour chicken soup (or water) into the pot. When it starts to steam but is not yet boiling, squeeze the meat paste into balls and put them into the pot;

7. Turn to medium heat, bring to a boil slowly, and keep removing the foam;

8. After all the meatballs float up, cook for about 10 minutes until cooked.

9. Place the meatballs on a large plate and top with chopped green onions and cilantro.

10. In another wok, add a little sesame oil and sauté black pepper over low heat;

11. Add the original soup for cooking meatballs and a little cooking wine, turn to high heat and boil;

12. Add appropriate amount of salt to taste;

13. Pour the soup over the meatballs, scallions and coriander while it’s still hot;

14. Finally, add appropriate amount of aged vinegar and serve.
