1. Pasta (Macaroni)

The noodles are made from durum wheat. Due to the high protein and gluten content of the raw material, they are resistant to steaming and boiling, have a dense texture, and are digested slowly.

2. Multigrain noodles

Noodles made from multiple grains and beans, such as buckwheat noodles, bitter buckwheat noodles, oatmeal noodles and mung bean noodles, are made by mixing grain flour or bean flour with flour. The health characteristics of this type of noodles are mainly related to the proportion of added miscellaneous grain and bean flours. If the added amount is less than 20%, its digestion speed is only slightly slower than ordinary noodles, which is not conducive to controlling postprandial blood sugar; if the added amount of miscellaneous grain flour is more than 40%, the health effect of lowering postprandial blood sugar is more obvious. Therefore, it is recommended that consumers check the ingredient list to see whether the added proportion of miscellaneous grain and bean powder is marked when purchasing. Another way is to use whole grains or bean flour and make round noodles using an extrusion process. This type of noodles has a high dietary fiber content and is digested more slowly, making it suitable for people with diabetes, overweight or hyperlipidemia. However, due to the lack of gluten, this type of noodles cannot be steamed for a long time in most cases, otherwise the noodles will break and become sticky, resulting in a poor taste.

How to buy multi-grain noodles with high additive content? The key lies in the amount of grains added. For noodles that do not have a label on the amount of added grains, the amount added is basically less than 15%. Or you can look at the ingredient list. The closer the ingredient is to the front, the more it is generally added.

3. Vegetable noodles

Common vegetable noodles are made by adding vegetable juice such as spinach or carrot juice to flour. The digestion characteristics are similar to those of ordinary white noodles, but the content of vitamins is higher, which makes it suitable for people with higher vitamin needs.
