How to make Thousand Layer Puff Pastry

Thousand-layer puff pastry is one of our traditional delicacies. It is mainly made of wheat flour. It is not only crispy and delicious, but also rich in nutritional value. Wheat flour contains a large amount of carbohydrates and a variety of nutrients, and can also supplement the trace elements needed by the body. The method is also very simple. Just mix the flour, add appropriate amount of lard and chopped green onion, and put it in the pan.

What is the method of making Thousand Layer Puff Pastry?

Materials

80g all purpose flour

30g lard

1/4 teaspoon salt

35g water

80g low-gluten flour

35g lard

250g pork

Steps

1. Knead the puff pastry and water-oil dough. Medium-gluten flour, lard and water are mixed together to make an oily dough (left); low-gluten flour, matcha powder and lard are mixed together to make an oily dough (right).

2. Divide the two doughs into several equal parts.

3. Wrap the oil dough in the puff pastry to make it into a large dough.

4. Knead the dough with a rolling pin.

5. Roll the dough for the first time.

6. Roll up.

7. Then roll the surface vertically.

8. Roll it up again.

9. Then place the dough vertically.

10. Press down and flatten.

11. Take out the pork prepared in advance, chop it into pieces, add scallion, soy sauce and salt to season.

12. Wrap the meat filling in the pastry.

13. Score the surface of the wrapped biscuits, put them into the air fryer, and brush them with egg liquid.

14. Air fryer at 180° for about 35 minutes (as shown in the picture, it is about 15 minutes, and the color on the surface of the crust is not obvious enough.)

500 grams of flour, pepper powder, pork filling, green onions, fine salt, spicy and fresh sauce, sesame oil, cooking wine, light soy sauce, dark soy sauce and peeled cooked sesame seeds.

1. Knead the dough: Add 0.4 grams of yeast, 0.8 grams of baking powder, 0.4 grams of baking soda, and 10 grams of salt to 500 grams of flour, stir well, add warm water, and slowly pour warm water a little bit at a time into the flour to mix. After kneading it into a lump with your hands, put the dough on the operation panel and knead it hard. After kneading the surface into a smooth one, cover it with plastic wrap and let it rest for 15 minutes. I think if you spend more time on the dough, the lasagna will taste better. 2. Make the filling: Take an appropriate amount of pork filling, put it in a bowl, add cooking wine, salt, seasonings, pour in two spoons of sesame oil, stir vigorously until the meat is tendonous, then chop the shallots. Be sure to choose small shallots. The lasagna made with small shallots will taste better. Beat an egg, stir well, and set aside.

3. Come back and continue kneading the dough. This time, put oil on your hands, apply it on the dough and continue kneading. After the dough has risen for a while, you can make it. 4. Take the whole dough, put it on the chopping board, and use a knife to cut it into the size you want (or according to the size of the electric baking pan. Don't make it too big or it can't fit in the pan. That would be embarrassing). Take one of the pieces of dough, use a rolling pin, roll it about 0.8 cm, and evenly apply a layer of oil on it. The key is to evenly sprinkle dry flour on the oiled surface until all the oil is absorbed. Then evenly spread the filling we just made on it.

5. Fold from the top down to 2/3 of the way, apply oil on the turned over part, sprinkle with dry flour, then turn the bottom over and cover it on the top, doing the same on both sides (just like folding a quilt). Finally, you will see a square dough. Apply a little water evenly on the front and back of the dough with your hands, not too much, and sprinkle peeled cooked sesame seeds on it. The purpose of using water is to make it easier for the sesame seeds to stick to the surface and not fall off easily. Finally, sprinkle with thin flour and use a rolling pin to roll it into a thin pancake. Just follow the same steps for the other seasons. 6. Turn on the electric baking pan, adjust the temperature to 180 degrees, put oil in the pan, a little more this time, and put the whole pancake we just rolled into the pan.

Cover the electric baking pan. The electric baking pan is heated both top and bottom, so we also brush oil on the top of the baking pan. Just cover it. When it has been slowly cooking for about 3 minutes, open the lid, brush the surface of the dough with oil, and continue to cover it. After another 2 minutes, turn it over and fry the other side. When this side is cooked, use a spatula to scoop it out and put it on the chopping board. Finally, cut it with a knife and you can eat it.
