How to make scallion buns

Ingredients: pork belly, old flour, baking soda, onion, ginger, sweet bean sprouts, salt, MSG

Steps for making old dough scallion oil buns: 1. Let the old dough ferment. I will teach you a recipe for fermenting old dough. You can first soak the dried noodles in water and ferment for 2 to 3 days until they become sour. 2. Heat the oil in a pan and fry the minced pork belly and ginger rice until the oil comes out. Add the sweet noodle sauce and fry together. 3. Add bean sprouts and salt according to your preference. If you like light food, you don’t need to add salt because bean sprouts already have salt.

4. Remove the fried meat from the pan and add the chopped onions. The onions do not need to be fried with the meat, then add MSG and mix well. 5. Add flour to the old dough and knead it until the dough is not sticky. Start fermenting. It takes 4 hours in summer and a little longer in winter. 6. We fermented the already fermented dough for 4 hours. By the way, add baking soda and water to the fermented dough and knead it together. 7. Next, start making dumplings. 8. Steam the wrapped dumplings for 15 minutes and you can start eating.

Method 2

Ingredients: 250g high-gluten flour, 60g butter, 35g sugar, 15g egg liquid, 2.5g salt, 5g dry yeast, 125g water, appropriate amount of condensed milk, appropriate amount of chopped green onion, appropriate amount of carrot, appropriate amount of luncheon meat cubes, appropriate amount of egg yolk paste

Put the egg liquid, water, sugar, high flour, milk powder and yeast into a blender and beat until slightly glutenous. Add salt and continue beating until it expands. Add butter and beat until it is complete.

After pressing into strips. Add chopped green onion and diced carrot and fold in half. Then cut into strips. Hold the head and tail, stretch it, and turn it in circles. Place on a plate and let rise for an hour. Add the egg yolk paste and bake for 14 minutes.
