Spiced Smoked Fish

1. Cut the fish into 3x5x2cm pieces and marinate overnight with soy sauce, cooking wine, white pepper, salt, green onion and ginger.

2.1 Take another pot, put a little oil in it, add onion, ginger and garlic, then pour the juice made with soy sauce, vinegar, sugar and cooking wine into the pot, add spices, bay leaves, cinnamon, chili, add water and boil for about 5 minutes. Taste it to see if it is the taste you want. If you think it is suitable, you can pour the fried fish pieces into the sauce pot while it is hot. I put the fried fish in the sauce as soon as I finish frying one batch. When the next batch is almost done, I take out the fish in the sauce (at this time there is a gap of about 5 minutes, and the fried fish has absorbed the flavor). Then I take out the fried fish in the oil pan and put it into the sauce pot. This way I don't have to boil too much sauce and it saves time. It took one and a half hours to cook all the fish pieces, weighing about five pounds.

3.2 Heat oil in a pan until it is 70% hot. Dip the marinated fish pieces in the juice and put them into the pan to fry. Do not turn them over at will. Fry them over when they feel firm.

4. After everything is done, pour the remaining juice into all the fish pieces that have been soaked in the juice, let the fish pieces absorb it slowly, and after two hours the juice has soaked through, you can eat it, it tastes great.
