How to make fried fish in southern Jiangxi

Now that people’s lives are better, they have become more careful about what they eat. In the past, people ate to fill their stomachs. Nowadays, people eat for health, so here I would like to introduce to you a healthy and delicious stir-fried fish from southern Jiangxi.

1.1 Sizing. One tablespoon of starch, one tablespoon each of light soy sauce and dark soy sauce (if you don’t like it too dark, use less or no dark soy sauce), half a spoon of salt, appropriate amount of chicken essence, one egg white, one tablespoon of cooking wine (rice wine is better), mix well, and marinate for 10 minutes.

2.2 Cut the grass carp into smaller and even pieces and drain some water. The authentic stir-fried fish only uses the fish belly meat, while the home-cooked ones are not so particular and just add anything.

3.1 Heat a pan of oil and prepare to fry the fish. Mix the fish again before putting it into the pan (add a little vinegar to prevent it from sticking). Heat the oil until it starts to smoke, then put the fish pieces into the pan one by one, using chopsticks to stir them to prevent them from sticking together. If you want to eat tender ones, fry them for two minutes; if you want to eat them tough, fry them for three minutes. Make sure to fry them over high heat. It is said that in the hotel, they only put them in the pan for one minute and then take them out.

4.2 Prepare the ingredients: slice the garlic, cut the ginger into shreds, cut the chili into dice (I use spicy red peppers, you can use green peppers if you don’t like spicy food). Don’t chop the green garlic, just cut the garlic white into oblique sections, and cut the green onion into chopped green onion.

5.1 Prepare the sauce. Just use a spoon this big, with a tablespoon of vinegar, a tablespoon of light soy sauce, half a tablespoon of dark soy sauce, half a teaspoon of salt (if it’s not enough, you can add more later. I’m afraid it will be too salty, so I don’t dare to put too much), half a teaspoon of sugar, and an appropriate amount of chicken essence. Add some water and make it half a bowl.

6.2 Fried, ours is a bit older. In fact, you can eat it like this. When I was a child, I liked to eat it secretly. If I was caught, I would scold and get very angry.

7. A large plate of fish weighing one and a half pounds was fried, but I only fried half a plate. Eat the rest early, it won't smell good if left for a long time.

8. Leave some oil in the pot and add ginger and garlic to fry until fragrant

9. Add green pepper and green garlic, stir-fry, and add a little bit of salt, just a little bit.

10. Stir-fry for one minute, add the fish pieces, and stir gently, being careful not to break the fish. Add the prepared sauce and simmer for a while.

11. Still in the bowl of sauce, add some water starch. I put about half a tablespoon of starch. You can use any amount of water. I put half a bowl. After simmering in the pot for about two minutes, you can add water starch.

12. Sprinkle with chopped green onions and stir until the sauce is collected, then serve.
