5. Put about two spoons of oil in the pot, bring it to a boil, then pour it into the bowl with chopped chili peppers. You will hear a sizzling sound and the aroma of the chili peppers will waft out.

6. At this time, the chicken is almost marinated. Put a large spoonful of oil in the pot, add peppercorns, star anise and dried red pepper.

7. Add the remaining ginger slices, garlic cloves, and preferably some scallions and chili peppers.

8. Add chopped onions and stir-fry together.

9.1 If the pot is a little dry, add a little cooking wine. If it is not dry, then you don’t need it.

10.2 Add potato slices and stir-fry. When the potatoes are slightly burnt, add the marinated chicken. If you don't want potatoes, you can just omit them and add chicken.

11. When the food becomes a little drier, add about half a spoonful of light soy sauce.

12. Add a spoonful of aged vinegar and it will smell fragrant.

13. Add a spoonful of white sugar and stir-fry together.

14. Finally, add beer, about half a can, which should cover 2/3 of the food in the pot. There is no smell of alcohol when you eat it.

15. After the sauce is reduced, add the chili oil prepared earlier. Stir fry together again until evenly mixed.

16. Finally, the delicious home-cooked chicken hotpot is out of the pot. Anyway, I feel that it is no different from the ones sold outside, hehe.
