How to make red bean filling Cantonese mooncakes

The preparation of Cantonese mooncakes with red bean filling is very simple and it is a very common dish on many family tables.

1. Prepare the food. Yes, it is that simple: there are only 5 things. Syrup and soap water can be bought online, while others are sold in supermarkets and vegetable markets.

2. Mix syrup, oil and soap water together.

3. Stir into syrup, mix oil and soap water completely

4. Pour in flour and mix evenly to form dough (crust)

5. When the hardness is about the same as that of the earlobe, cover it with plastic wrap and let it rest for a while. At this time, you can prepare the filling

6. I used 25 grams of filling per portion, and divided the crust into 12 equal portions (my amount was about 17 grams per portion). In fact, the 50-gram mooncake mold looks better when made into a 40-45-gram one. The 50-gram one is too thick and doesn't look good.

7. Flatten the dough, wrap it with red bean paste, and seal it with your thumb and index finger.

8. After wrapping, put it directly into the mold and flatten it easily with your fingers.

9. Then turn it upside down on a baking tray covered with baking paper, and press down on the handle with the force of your palm. This way, the force is evenly distributed, and the pressed surface looks good without deformation.

10. Bake in a preheated oven at 200℃ for 5 minutes until the surface moisture is dry. Brush with egg liquid (mixed with egg yolk and a little water)

11. Brush with egg liquid, bake at 185℃ for 15 minutes. The perfect mooncake is out!
