How to make beef in pickled pepper sour soup

4.12 Stir-fry for a few times and add some pickled pepper water. When it is about 80% cooked, it can be removed from the pan and set aside.

5.21 Add more oil to the pot, stir-fry the onion, ginger and garlic, then add the bell pepper and pickled pepper and stir-fry together. After the aroma comes out, add appropriate amount of water and salt, chicken essence, sugar and white pepper powder and bring to a boil.

6. After the water boils, add the udon noodles. While cooking, use chopsticks to gently break up the noodles. After they are broken up, cook for another minute and then add the enoki mushrooms. Then add appropriate amount of white vinegar to season.

7. Place the freshly prepared bean sprouts at the bottom of the bowl that contains the sour soup beef, then wait for the enoki mushrooms and udon noodles to cook and evenly place them on top.

8. Leave some water in the pot, bring it to a boil and add the beef rolls.

9. Since the beef rolls I bought abroad had a lot of blood, I used a soup spoon to skim off as much blood as possible after the pot boiled, then took out the meat rolls and placed them on top of the enoki mushrooms and other things. You can taste the remaining soup to see if it is flavorful enough. If it is not thick enough, you can season it appropriately. Finally, filter it with a strainer and pour the soup in the pot over the beef.

10. Finally, you can prepare some pickled peppers, chopped green onions and some green and red peppers or peppercorns to decorate the surface. I didn’t have any red peppers at the time, so I had to sprinkle some wolfberries to add color~~
