If you want the flat noodles to be chewy and elastic, you must first choose good flour. Not all flour is suitable for making flat noodles. Some flour is suitable for making steamed buns, some flour is suitable for making pancakes, and high-gluten wheat flour is suitable for making flat noodles. My store uses Wudeli high-gluten flour. The noodles made from this flour are chewy and delicious. Of course, this flour is sold all over the country, and its price is about 5 yuan more expensive than ordinary flour.

There are two methods of making ban mian: traditional hand-stretched noodles and machine-pressed noodles. First, let me tell you about our traditional handmade stretched noodles in Anhui. The dough ratio for hand-stretched noodles is: 30 pounds of noodles, 14 pounds of water, 500 grams of salt, and 15 grams of alkali. Dissolve the salt and alkali in water first, then pour into the dough mixer and knead the dough. Knead the dough for 5-10 minutes, then roll it into small dough sticks. Sprinkle corn starch on it to prevent it from sticking. Put it in a box and when someone is eating, take it out and roll it with a rolling pin. There are 6 rolling sticks for a small bowl and 8 for a large bowl.

The dough mixing ratio for machine-pressed noodles is: 30 pounds of noodles, 12 pounds of water, 300 grams of salt, and 10 grams of alkali. Everyone must remember that the proportions of machine-pressed noodles and hand-stretched noodles are different, so don't get them wrong. Nowadays, few people make hand-stretched noodles. Most people use noodle machines, which are simple, convenient and easy to operate. Just like before, dissolve the salt and alkali in water, put the dough into a dough mixer, and then put the dough into a dough press machine and press it 4-5 times. After the dough is pressed and smooth, cut it into pieces directly. One piece is the amount of one bowl. Then put it in a box, and when someone is eating, just put it in a noodle machine and press it into noodles.

Does it mean that the more types of spices there are, the better the taste will be? Definitely not. The taste of the food depends mainly on the heat of the cooking and the ratio of the spices. Last year, there was a student from Jinan, Shandong, who also made dry ban mian. He had more than 30 kinds of ingredients in his ban mian, but the taste was not good. It was just salty and spicy, without the spice flavor of ban mian. Later he came to my shop to learn again, and only then did he get the taste right.

Moreover, opening a board noodle shop requires small investment, quick returns and low risks, so many people also want to open a board noodle shop. A friend of mine used to drive a taxi, but later it became difficult to run a taxi business, so he learned the authentic banmian technique from me. After learning it, the couple went to Shandong to run the business. Because the taste was authentic, the business was very good, and he bought a car after running the business for a whole year.
