1. 300g spinach, 200g pork, 5 scallions, a small piece of ginger, 39 wonton wrappers

2. Process the spinach first, cut it into 5mm pieces, add some salt and remove the moisture

3. Squeeze the spinach dry. You can discard the spinach water or use it for other purposes (I used it to make green hand-rolled noodles)

4. Meanwhile, chop the pork, mince the ginger, and chop the green onions.

5. Start mixing the stuffing and add 20ml sesame oil

7. Add salt as needed, mix well and dip a little of the filling on the tip of your tongue to taste the saltiness.

8. Start making wontons. You need to have a bowl of water because the wonton wrappers you buy need to be wet to make them firmer.

9. If you can’t finish the wontons, you can freeze them in the refrigerator

10. Filling, water, wonton wrapper. Dip it in water so it can be squeezed tightly

11. Place the filling one-third below the skin

12. Fold the skin under the filling upwards, but don’t fold it completely in half, see the picture for details.

13. Fold the triangle at the top of Figure 3 downwards and make the fillings tighter.

14. Dip some water where the chopsticks indicate, as this is where the pinch will be. Then follow the arrow to wrap it around and stick the two ends together.
