Chicken Stew with Mushrooms and Potatoes

Ingredients: 2 chicken drumsticks, 10 fresh mushrooms, 1 medium potato, 1 piece of ginger, half a scallion, cooking wine, salt, sugar, light soy sauce, dark soy sauce

1. Chop the chicken legs into 3 cm square pieces. Soak the mushrooms in starch water for 20 minutes, then wash and cut into pieces of similar size to the chicken thighs. Peel the potatoes, cut into small pieces and soak in cold water.

Cut the green onion into inch-long pieces and peel the ginger and cut it into large slices.

2. Pour oil into the pan and heat it over high heat until the oil is 70% hot. Add chicken pieces, scallion segments, ginger slices, 1 tablespoon of cooking wine, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce and 1 tablespoon of sugar into the pan. Stir-fry for about 2 minutes. After the surface of the chicken changes color, pour in the chopped mushrooms and potato pieces and continue to stir-fry for 2 minutes. Then pour in boiling water to cover the ingredients. Bring to a boil over high heat, then simmer over low heat for 30 minutes until the potatoes are cooked.

Chicken stew with yam

Main ingredients: half a hen, side ingredients: ginger (sliced), pepper, yam (peeled and washed in advance, cut into pieces with a rolling knife), Codonopsis, Angelica, red dates, wolfberry, shallot, seasoning: cooking wine, white vinegar, iodized salt.

2. To make the soup, in order to save time and energy, and because the local chicken I used is not easy to soften, I first use a pressure cooker to cook it for fifteen minutes and then use a casserole to cook it: fill the pressure cooker with water, pour in the chicken pieces, add ginger slices, 7 or 8 peppercorns, a teaspoon of white vinegar, and a teaspoon of cooking wine.

3. After the chicken soup is cooked in the pressure cooker, pour the soup into a casserole, add codonopsis, angelica, red dates, and wolfberry and bring to a boil over high heat. After simmering the soup on low heat for 30 minutes, pour in the yam and continue to simmer the soup on low heat for 20 minutes.

4. Add a little salt and sprinkle with chopped green onions.
