Learn to make spicy tofu

Method 1

Ingredients: tofu (1 piece), minced meat (appropriate amount), chili powder (10 grams), pepper (10 grams), garlic (10 grams), shallot (appropriate amount), bean paste (appropriate amount), cooking oil (appropriate amount), soy sauce (a little), water starch (30 grams), sesame oil (a few drops), etc. Step 1. Cut the tofu into small pieces, mince the garlic, chop the shallots, and chop the bean paste for later use;

2. Put the Sichuan peppercorns in a pot and stir-fry over low heat until cooked; 3. Put the cooked Sichuan peppercorns in a garlic press and crush them into fine powder for later use; 4. Add appropriate amount of water to the pot, put in the tofu and blanch it for one minute after the water boils, then remove and set aside; 5. Add appropriate amount of base oil to the pot, then put in the minced meat and stir-fry until cooked; add in the bean paste and chili powder and stir-fry until red oil comes out, then add in the minced garlic and stir-fry until fragrant; 6. Add appropriate amount of hot water and bring to a boil; 7. Put the tofu in the pot and boil over high heat, then add a little soy sauce; 8. Put the Sichuan pepper powder into the pot; 9. Put the water starch into the pot and boil over high heat; then add a little sesame oil, stir well and serve.

Method 2 Ingredients: tofu (1 box), minced meat (1 small bowl), bean paste (1 tablespoon), peppercorns (1 small handful), minced ginger (1 teaspoon), minced garlic (1 teaspoon), colored peppercorns (1 tablespoon), chopped green onions (1 tablespoon), pepper powder (1 teaspoon), etc. step

1. Heat a proper amount of oil in a wok, then pour in the minced meat and stir-fry until loose, then set aside after it is cooked; 2. Pour more oil into the wok, heat it, then add the peppercorns, minced garlic and minced ginger to bring out the aroma; 3. Add the bean paste and stir-fry until the oil turns red, then add the colored peppercorns and stir-fry evenly, then pour in the diced tofu and stir-fry for about 3 minutes; 4. Pour the previously fried minced meat into the wok, stir-fry for a few times, then add water starch to thicken, and sprinkle with chopped green onions and pepper powder after the sauce is reduced.

Method 3

Ingredients: tofu (1 box), beef filling (100 grams), green garlic (50 grams), bean paste (40 grams), chili powder (10 grams), pepper powder (1.5 grams), rice wine (20 grams), salt (5 grams), minced ginger (3 grams), water starch (40 grams), broth (250 grams), etc. step

1. Cut the tofu into small pieces, put it into a pot, add salt and blanch it thoroughly, do not use boiling water; 2. Wash the green garlic, cut it into 1 cm long segments, and chop the bean paste and fermented black beans; 3. Heat the oil in the pot to 60%, add the beef filling and stir-fry until the water is dry, then add rice wine, and then add the bean paste to stir-fry until the oil turns red; 4. Add chili powder, minced ginger, and fermented black beans and stir-fry until fragrant, pour in the broth, add the tofu, soy sauce, and salt, and simmer the tofu over low heat until it is well-seasoned; 5. When the soup is slightly dry, add the green garlic and water starch, collect the juice, serve on a plate, and sprinkle with pepper powder.
