1. Prepare Materials

2. Boil water in a pot, add pig's trotters, green onion and ginger, blanch for 5 minutes and then remove

3. Pour cooking wine and dark soy sauce into the pig's trotters and marinate for a while. After draining, use dark soy sauce to evenly color them.

4. Wash the chestnut meat, drain it and put it into the oil pan to fry it.

5. Put the pig's trotters into the oil pan with the oil temperature 70% hot and fry for 3 minutes. Take it out

6. Pour a little oil into the pan, add sugar and fry until sugar color comes out.

7. Add the pig's trotters and stir-fry, add cooking wine, soy sauce, broth, mushrooms, tangerine peel, peppercorns and star anise tied with gauze, cover and simmer for about 2 hours

8. Remove the gauze bag, put in the chestnut meat and simmer for about 20 minutes, add chicken essence, wet starch to thicken, and drizzle with sesame oil.

1. Put appropriate amount of ginger and garlic in boiling water, then put in pig's trotters after 30 seconds, take them out after 5 minutes, pour out the water, wash the pot, and rinse the pig's trotters again in cold water.

2. Put the minced garlic, shredded ginger and pig's trotters into the pot, add water to cover the trotters, then add salt, MSG, some sugar, soy sauce, and a small amount of white wine. Cover the pot and bring to a boil. Then cook over medium heat until 1/3 of the water is left, then reduce to low heat until cooked through.

3. Sprinkle with chopped garlic leaves and green onions and serve immediately, it is fragrant.
