1. The first step is to wash the long beans and cut them into sections, mince the ginger, and cut a clove of garlic into small slices. Cut the tortilla into strips and wash the coriander and cut it into small pieces.

2. Heat the oil in a wok until it is 50% cooked, add the minced ginger and garlic slices, and immediately add the chopped beans. Be careful not to overcook the ginger and garlic. Fry the beans until they are 60% to 70% cooked, add salt and sesame oil, add the cut pancakes, spread the pancake strips evenly on the vegetables, pour in a small amount of water (on top of the pancake strips, pour evenly), then cover the pot and simmer for about 15-20 minutes.

3. After stewing, open the lid of the pot, add the chopped coriander, pour a little vinegar, use a spatula or chopsticks to mix the vegetables and pancakes thoroughly, and serve. (It tastes better when eaten with garlic)
