Method 1

Material

Main ingredients: Chicken feet (appropriate amount)

Accessories: beer

Seasoning: Onion, garlic, aniseed, salt (appropriate amount), ginger (appropriate amount), star anise (appropriate amount), pepper (appropriate amount), cooking wine (appropriate amount), soy sauce (appropriate amount), sweet and spicy sauce (appropriate amount), water (appropriate amount), sugar (a little), white vinegar (appropriate amount), oyster sauce (appropriate amount)

Production process

1. Wash the chicken feet bought from the supermarket, cut off the nails, and then boil them in water to remove the fishy smell and impurities.

2. After heating the oil in a pan, add scallion, ginger, and garlic and stir-fry. After the aroma comes out, add some cooking wine, soy sauce, salt, sugar, pour in the chicken feet, stir fry together, it is best to fry until the skin is bubbling.

3. Note: Add star anise, a cup of beer, and enough water. Bring to a boil and simmer over medium heat for 40 minutes. Finally, simmer over high heat to dry up the excess soup. The sauced chicken feet are ready.

Method 2

Main ingredients: Chicken feet (appropriate amount)

Accessories: rice wine

Onion, garlic, aniseed, salt (appropriate amount), ginger (appropriate amount), star anise (appropriate amount), pepper (appropriate amount), cooking wine (appropriate amount), soy sauce (appropriate amount), sweet and spicy sauce (appropriate amount), water (appropriate amount), and white sugar (a little).

Wash and cut off the chicken feet, drain the moisture, heat the oil pan, fry them on medium heat until golden and swell up, remove them from the pan and drain the oil. Leave a small amount of oil in the pan, heat it, add scallion, ginger, and garlic, stir-fry until fragrant, then add some white wine, soy sauce, salt, sugar, aniseed, a cup of beer, and enough water. After boiling, add the fried chicken feet, simmer on medium heat for forty minutes, and finally use high heat to dry up the excess soup. The finished product is brown-red in color, has a mellow flavor, a soft texture, and a long aftertaste. First, the materials:

A few chicken feet, 1-2 spoons of fermented black beans, 2 red peppers (chopped), some minced garlic, 1 spoon each of maltose, white vinegar, oyster sauce, and soy sauce, and some dark soy sauce. The others are sugar, MSG, and salt.

Then do:

1. Put the chicken feet into water with white vinegar and maltose and boil for a while, then pick them up.

2. Fry in hot oil until the chicken feet are completely soaked and the skin and bones are completely separated.

3. Stir-fry the garlic, red pepper and fermented black beans until fragrant, prepare the seasoning using soy sauce, oyster sauce and MSG, then steam it together with the chicken feet for 30 minutes.

Method 3

Ingredients: 1000g chicken feet

Seasoning: 10 grams of onion, 10 grams of ginger, 5 grams of garlic, 25 grams of salt, 3 grams of star anise, 3 grams of pepper, 3 grams of cinnamon, 5 grams of cooking wine, 10 grams of soy sauce, 8 grams of red pepper, 1500 grams of water, and 15 grams of sugar.

Method: After cleaning the chicken feet with clean water, soak them in clean water for 30 minutes to drain the blood in the chicken feet and avoid the fishy smell of the finished product. After the water is boiled, put the chicken feet into the water for 3-5 minutes.

Put a proper amount of cooking oil in a hot pan, put the drained chicken feet in, add red pepper, onion, ginger

Stir-fry for 3 minutes; add appropriate amount of boiling water and star anise, pepper, and cinnamon and cook. After cooking for 10 minutes, add salt, sugar, soy sauce, and cooking wine. Cook over high heat until the soup is reduced. Add garlic slices, MSG, and soy sauce before serving.
