Caramel Apple Pudding Pie Recipe

1. Place the refrigerated butter on a work surface and place the flour on top.

2. Use a scraper to chop.

5. Start mixing the flour and egg yolk little by little from the inside.

6. When the mixture with the eggs is about 1/3 complete, use a spatula to move the powder to the center and mix the whole thing together.

7. After the whole mixture is mixed, rub it on the workbench with your palms to mix it. Be careful not to form lumps and do not knead it, otherwise it will lack crispness after baking.

8. When the mixture is completely free of lumps, shape it into a ball and then roll it into a round shape. This will make it easier to roll it into a dough skin later. Wrap it with plastic wrap and refrigerate for at least 2 to 3 hours.

9. Tap the dough gently with a rolling pin to soften it and shape it into a 2-3MM round shape.

10. Place the dough in a pie plate and press lightly with your hands to ensure that the dough fits snugly against the plate without any gaps.

11. Roll the dough over the pie plate with a rolling pin to remove any excess dough and let it sit for 20-30 minutes.

12. Use a fork to poke small holes on it.

13. Preheat the oven to 160° for 10 to 15 minutes. At this stage, just bake until the bottom is white and the edges are slightly golden.

14. Use a brush to brush the egg yolk liquid on the bottom to plug the hole and prevent the batter from leaking out.

15. Core, peel and cut the apples.

16. Add appropriate amount of butter and sugar and put them in the pot to melt on the volcano.

17. Place the apples in the pan, do not overlap them.

18. When the apples are about to become burnt, add appropriate amount of water.

19. Continue heating until it turns yellow brown. The total time needed to fry the apples on both sides is about 10 minutes.

20. Pour in a little brandy.

21. Beat the eggs in the batter, and add sugar and low flour in turn.

22. Add fresh cream, rum, and melted butter in turn, mix until there are no lumps, then pour the fried apple soup into the mixture.

23. Place the fried apples in a pie plate and arrange them neatly.

24. Pour the prepared batter until it reaches the edge. Heat in the oven at 170° for 20 to 30 minutes. If the color looks like it is about to burn, lower the temperature. Take it out and demould it while it is hot and let it cool.
