Ingredients for making crispy tofu Old tofu, 50 grams of eggs, 50 grams of green peppers, 50 grams of chili peppers (red, pointed, dry), 200 grams of wheat flour, seasoning: 5 grams of soy sauce, 3 grams of MSG, 3 grams of pepper, 10 grams of chili sauce, and 40 grams of peanut oil. 2. Steps for making crispy tofu 1. Slice. In order to make the slicing fast and of good quality, special tools are required. Do not slice directly with a knife. The special tool for slicing is a wire frame. The specific structure is: use wooden boards to make a bottomless square frame, the frame is 70 cm high, 150 cm long and 100 cm wide. Use thin steel wires to fix one on the hollow side at intervals of 8 mm to form a steel wire frame. When operating, place the tofu upright, align the steel wire on the wire frame with the tofu, and press down with your hands to cut the tofu into slices. The specifications of each piece are: 10 cm long, 6 cm wide and 0.8 mm thick. 2. Dry and dehydrate. Drying and dehydration can be done by drying and airing. Radiators can be used as heat sources for drying. Radiators can be placed all around the house, and a wire rack can be placed indoors like raising silkworms, with tofu slices placed on it. The drying yard should be selected in a place with good lighting and away from toilets and livestock pens. The whole process takes about 2 minutes. 4. Brittle treatment. The embrittlement agent is sodium hydroxide, the pure product is colorless and transparent crystals. When producing crispy tofu, food grade sodium hydroxide and flake alkali are used. Available at chemical companies everywhere. Determine the amount of water and thus the amount of alkali required according to the size of the cement soaking pool or tank. The weight percentage concentration of sodium hydroxide in the soaking pool is required to be 0.4% to 0.5%. First use a small amount of cold water to dissolve the sodium hydroxide in a basin, then pour it into the sink or tank and stir well. Drain the excess oil from the puffed tofu and soak it in a pool or vat. The soaking time is: 12 hours when the temperature is above 20℃; 16 to 38 hours when the temperature is below 20℃, until the dried tofu becomes soft and crisp and absorbs water. 5. Neutralize and rinse. The neutralization rinse serves to set the shape, further embrittle and neutralize excess sodium hydroxide. The neutralizer should be food grade acetic acid, but it can also be replaced by edible vinegar. There is about 4% to 10% acetic acid in edible vinegar, which can also be used as a neutralizer. The concentration of the aqueous solution for preparing acetic acid solution is required to be 1% to 2%, that is, 0.5 to 1 kg of acetic acid or 5 to 10 kg of vinegar is added to 50 kg of water. Soaking time: at 20℃, about 2 to 5 hours. When the temperature is high or low, the soaking time can be shortened or extended as appropriate. 6. Rinse with clean water. The facilities for rinsing with clean water are the same as those for embrittlement. The rinsing time is 2 to 5 hours, and the rinsing can be stopped when the pH value is 7.
